PRODUCTION GALLEY COOK - Seasonal

Position Overview:  The Production Galley Cook (PGC) is responsible for guaranteeing that CRS employees are served nutritious, good tasting and appealing meals and snacks. It is the PGC’s responsibility to prepare these meals and snacks by methods that maintain high nutrient levels and that are sanitary. With approval from the General Manager, the PGC purchases foods and supplies necessary and keeps records as required by CRS management. This position involves extensive organizing, problem solving, record keeping and time management.

 

Responsibilities:

1)     Cleans food preparation areas, cooking surfaces, and utensils.

2)     Washes, cuts and prepares foods designated for cooking.

3)     Prepares and cooks a variety of foods: meat, seafood, poultry, vegetables and cold food items.

4)     Maintains established standards of sanitation, health, safety and food preparation and storage as set by the local and state health departments; maintains an orderly, sanitary and safe kitchen at all times.   Keeps the work area fresh all throughout the shift. Constantly uses safe and hygienic food handling practices.

5)     Verifies that prepared food meets requirements for quality and quantity.

6)     Purchases food and supplies necessary to prepare the planned menus for CRS employees.

7)     Ensures foods taste good and look appealing and that there are ample amounts of foods available for al CRS employees.

8)     Maintains cost control, budget and inventory systems including records of food production, service and attendance.

9)     Assures the proper care and maintenance of all food service equipment; identifies equipment needs for food preparation and service.

10)  Closes the kitchen correctly and follow the closing checklist for kitchen stations.

11)  Makes sure all storage areas are tidy and all products are stored appropriately.

12)  Returns dirty food preparation utensils to the appropriate areas.

13)  Participates in all emergency drills and environmental safety activities.

  

Responsibilities:

1)     Shares duties with the Assistant Cook (if any) for efficient functioning of food service program.

2)     Perform other duties as assigned.

 

 Other Skills/Abilities: 

  • Working knowledge of Excel, Word, Power Point, and PC office environment.
  • Ability to work independently; must have strong organizational skills.
  • Effective oral and written communication skills commensurate with the responsibilities of the position required.
  • Math and record keeping skills.

 Requirements:

  • Course work and training in foods, nutrition and/or dietetics.
  • Must possess knowledge of the principles, practices and skills in preparing foods in a nutritious, good tasting and appealing manner.
  • Prior experience in seafood processing food service preparation desirable.
